精選四川茂縣西路特級大紅袍花椒，位居中式料理十三種主要香料之首。擁有獨特迷人的木質調氣息與柚子辛香。果實皮厚實、小油苞多，色澤飽和且帶有油質感，顆粒大而均勻、香氣濃郁，只需少量添加，即可增添食物的香麻口感。


紅花椒是香料之王，一般台灣的紅花椒大多來自山東或是山西，麻度與風味較淡。

劉姥姥選用的大紅袍花椒屬於四川茂縣的西路頂級花椒，風味濃厚，是紅花椒中最麻最清香的頂級花椒，茂縣頂級花椒顆粒碩大，色澤鮮紅、香味純正濃郁、麻素含量高，被稱為四川第一紅花椒。西路花椒的標誌特性是帶有柚子清香和高麻度，麻的口感能刺激口腔分泌唾液，削弱舌上酸味、甜味，增強鹹味與鮮味的口感，不像南路花椒的柑橘皮革為太過明顯，搭配料理容易搶味。西路花椒的清爽鮮麻，酌量添加與料理相輔相成，讓食物嚐鮮美絕佳。
