These premium green peppercorns are known for their high numbing sensation and natural refreshing aromas of lime and lemon. On closer tasting, you may also detect subtle hints of wild herbs, lemongrass, and vine-like notes.
The fruits have a thick skin, numerous small oil glands, a saturated color, and an oily texture. They are large, even-sized, and aromatic. They are especially recommended for seafood or cold dishes, as they can remove fishy smells and add a unique fragrance.
Green peppercorns are less common in Taiwan and have a numbing quality with lime and lemon zest aromas. They are relatives of Japanese sansho pepper but are more intense and numbing in flavor. While sansho is often used in Japan to enhance eel dishes, Sichuan uses green peppercorns extensively in various dishes, including the renowned Green Peppercorn Fish.
Green peppercorns are produced throughout Sichuan, with Jinyang being the most famous region, known as the top green peppercorn producer in China.
